www.porknews.com.au Australian Pork Newspaper, October 2024 %u2013 Page 5FINE Foods is considered one of the leading events for the food industry and last week Australian pork had a presence in various iterations across the show.Continuing our longstanding relationship with Nestle Professional we had the great pleasure of showcasing Australian pork to the finalists from the competition.Together with PorkStar Australian Pork hosted a comprehensive educational morning with farmer Judy Croagh where chef and charcuterie-maker Mick Nunn broke down a forequarter and showcased the smallgoods he makes from each cut.His talk highlighted the importance of fresh Australian pork in his award-winning charcuterie and the importance of his relationship with Western Plains Pork where he sources his pigs.Nomad created an inspiring brunch menu prepared by Jacqui Challinor and her team, showcasing their nose to tail ethos and their creativity with pork usage.The finalists enjoyed everything from scotch eggs and smoked ham hock hash browns to sesame and pork fat caramel cookies.In the spirit of education and future proofing pork on menus, Australian Pork also worked with the Australian Culinary Federation to deliver an educational and informative pork demonstration in its kitchen and sponsored the National Apprentice Competition for the Final Year Apprentices.The competitors created a three-course meal in 180 minutes, were given a pork loin roast for their main meal and showcased the breadth of their knowledge with an array of dishes.Visit finefoodaustralia.com.au Australian PorkBoehringer Ingelheim Animal Health Australia Pty.
